Cider Apples
Cider apples generally come in three varieties: sweet,
sharp and bittersweet. Most traditional cider is made from some combination
of all three varieties. Combining these apples in differing amounts
can produce very different tasting ciders.
“Sweet” varieties of cider apples contain the amount of
sugar needed to produce the fermentation necessary to a good cider.
This category includes American Golden Russet, Jonathan and Washington
apples. These can be found at most grocery stores.
“Sharp” cider apples are used to give the cider some bite.
“Bittersweets” are used to balance the sweetness of the
cider. In most good ciders, a little bit of bitterness is considered
a good thing.
